Luciano Barrow, Head Chef at London Met's catering outlets, has recently been recognised by the International Salon Culinaire, achieving the bronze award for his cheese course at the prestigious catering competition at Hotel Olympia.
Luciano has 14 years of catering experience and says he enjoys the challenge of working at London Met. “We want to provide a menu that keeps up with growing trends and offers a wider choice. There are so many options outside and we want to offer greater flexibility across campus to obtain healthy and delicious options.”
Students and staff agree – the outlets, including the Highbury Canteen, are busier than ever and sales have increased year-on-year by 38%.
Luciano credits his father, also a head chef from Barbados and his mother, who cooked dishes from her home country of the Philippines, for inspiring him to develop his passion for cooking into a career. He trained at Westminster Kingsway and has a wide range of experience including working at Antic London and the John Lewis & Partners Head Office in their development team; as well as heading the launch of Usain Bolt’s first UK restaurant, Tracks and Records, working on its Caribbean menu.
Luciano’s cooking can be found in London Met’s catering outlets and on his Instagram page.
