Research Students

 

Daniel Amund

I obtained a BSc in Microbiology from Nigeria and completed an MSc in Food Science from LondonMet, graduating with Distinction in 2008. I joined the MRU in March 2010 on a Vice Chancellor's scholarship. My PhD research involves investigating the effects of various stress conditions on some functional properties of probiotic bacteria.

 

 

 

 

 

 

 

Amara Anyogu

I completed my undergraduate degree in Microbiology in June 2006 here at London Metropolitan University. Having developed an interest in African traditional fermented foods, I carried out my final year research project investigating the fate of pathogens during traditional African acid and alkaline fermentations. I joined the MRU in July 2006 as a Graduate Assistant and have just submitted my thesis “Aspects of survival of Salmonella during lactic fermentation of cassava” towards the award of a PhD in Food Microbiology.

I am particularly interested in the microbiology of beneficial microorganisms associated with traditional fermented foods. During my studies I also participated in teaching/demonstration and supervision duties for undergraduate and postgraduate students within the Department. Outside work, my interests include participating in charity walks and writing.

Sumeet Kaur

I joined London Metropolitan University as a Graduate Assistant in 2006 and am currently a PhD student at the university. My PhD studies focus on Escherichia coli biofilms their heavy metal resistance, antimicrobial resistance, gene and protein expression.

As a Graduate Assistant I have also taught and supervised at undergraduate and postgraduate levels at the university.

Shahram Naghizadeh

I obtained my BSc in Nutrition from Tabriz University (1994) and later my MSc in Food Science at Shahid Beheshti University, Tehran, Iran (2002). I have 13 years of experience of working with dairy industry and have been actively involved in management of the R&D team at Kalleh Dairy Company, Iran. I joined Department of Food Science, Azad University (Amol branch) as an academic staff and worked as lecturer and Food studies coordinator (2004-2007).

In 2008 I was awarded a PhD scholarship by Azad University and joined London Metropolitan University (Microbiology Research Unit) in January 2009. My PhD research project is on “Characterization of probiotic Bifidobacterium spp. isolated from commercial fermented milk products.”

 

Yizhi (Elyn) Xu

After working in China as a food inspector and laboratory quality assurance administrator, I joined LondonMet in 2009 to study Food Science at post-graduate level and graduated with the degree of MSc (Distinction) in 2009. Having developed an interest in Predictive Modelling, I joined the MRU in January 2010 as a postgraduate research student (Vice-Chancellor’s Scholar) and am carrying out research for my PhD on single cell lag phase duration of Cronobacter spp after sublethal heating.

In my spare time I like volunteering, music, and cooking.
